Northern & Main Hospitality Group is the partnership between Chef/Partner Marc Spitzer and Partner Noam Shemel. Spitzer spent more than 20 years shaping BONDST into one of New York City’s most beloved Japanese restaurants, after cooking at the Russian Tea Room and the James Beard Award–winning Le Cirque 2000; Shemel, principal of Kano Real Estate Investors, has spent more than two decades leading acquisitions and development across the New York area. Together, Spitzer and Shemel launched Northern & Main in 2025 with their debut restaurant Okaru in the Village of Roslyn, quickly establishing the Long Island-based group as a leading culinary force in the region. Koyu marks the group’s second project and its first omakase sushi counter.
